Mung Bean Pancakes

Life just keeps moving faster and faster! I'm leaving on Saturday for a few weeks in Becket and am very excited to do a week of yoga with Shiva Rea!! I will also get to see lots of friends and family, do some wedding planning, and go to our close friends wedding!!! 

It's be a long time since I shared a recipe! This is simple but delicious. The one downside to this recipe is that you have to plan ahead so you have time to soak the beans. Ideally they will soak for 12+ hours but I've made it work with only 6 hours of soaking.

Soaked Peeled Almonds

WOW!!! It's been a great but exhausting few weeks. Steve had 10 days off from work so we drove for two days to Pittsburgh and then were in Becket for another few days before driving back to Texas. It was such a great vacation and was so nice to see our friends and family! 

In honor of road trips I'm going to share one of my favorite snacks today; soaked and peeled almonds! As you probably know by know nuts are a good snack option because they are filled with oil, protein, calcium, and magnesium. I never ate a lot of nuts until I learned about soaking. Soaking nuts makes them one hundred times better!!

Mini Polenta Pizzas

Steve and I love to cook but there are still some nights were we are worn out from work or life and don't have energy to put together an elaborate meal. One night like this I threw together these Mini Polenta Pizzas and they were a big hit. Both of us like pizza, but since we make our own dough it takes some planning ahead of time.

Quinoa and Sun-dried Tomato Patties

Quinoa, quinoa, quinoa!!! Did you know 2013 has been called The International Year of Quinoa?!? I didn't until someone sent me this article a few weeks ago. 


So I'm sharing another quinoa dish! I hope you like it as much as I did.  I've been having a lot of fun search for new ways to cook with quinoa.  If you google quinoa recipes so many options come up but sorting through to find the best ideas takes a little time.  I kept running across quinoa patties, sometimes called quinoa burgers, so I knew I had to give them a try.

Cauliflower Bread Sticks

In college my friends would order pizza from Dominos. To save money and my health I usually didn't join them. But the breadsticks always looked SO yummy. This is the heathy version!! I doubt Dominos will start making them but I hope you try them next time you are craving something warm and cheesy.

Cauliflower Wings

We've started cooking Superbowl food a little early in our house. Growing up the only football game my family would watch was the Superbowl but since meeting Steve I've watched many more since he's a big Steelers fan. 

Steve wanted to make chicken wings last Sunday night and suggested I make Cauliflower Wings which he had seen a few places online.  We decided to start making our Superbowl food early since there is only so much food you can eat in one night.

Cucumber Rollups

We made appetizers for dinner and my contribution was Cucumber Rollups. I made hummus and spread it on thinly slices cucumbers before rolling them up. It was such an easy appetizer and very healthy.

Carrot Meat(less) Balls

I haven't posted a recipe in a long time and I'm craving these Carrot Meat(less) Balls that I made before Christmas.  I'm going to have to add them to our weekly plan for some time next week!

Meatballs are yummy but whenever I have them they sit in my stomach for a few hours making me feel uncomfortable.  Now I have a new recipe that I can make when Steve is having meatballs.

Red Pepper "Cheese" Dip

Mom asked me to figure out some type of appetizer to bring with us for Thanksgiving.  We hang out at my mom's aunt and uncle before we going out for dinner.  Usually there is a spread of cheese, chips, dips, vegetables, wine and sodas.  I have to admit that cheese and crackers are one of my indulgences. I love cheese and crackers but I knew that I couldn't eat a lot of them on Thanksgiving since so much food was going to follow a few short hours later.

A few weeks ago I found a recipe for a vegan Red Pepper Cheese Dip which this is based on with a few minor changes.

Baked Apple Chips

Yesterday we passed 3000 visits to our blog! Thanks so much for everyone to their support for the past three months. I'm having a blast writing and sharing all of our recipes and what is going on in our life. I hope you continue to visit us here. We really appreciate all the support.

I had a big bag of apples that I wanted to use up before I left for my trip home. The only fruit Steve eats are clementines so any other fruit I leave at home will just go bad.  I usually like to juice my apples but I have too many to keep having juice for the next few days.

Also apple chips seem like the perfect snack to bring with me. I usually just bring raw fruit but these will be an extra special treat! Steve even tried these and asked if he could take some as a snack for lunch!

I haven't had roasted pumpkin seeds in probably over 5 years. I haven't bought a pumpkin in about that long. I remember the first few years I was away at college I kept craving pumpkin seeds around Halloween but I never did anything about it.  Now I am!!

Baked Zucchini Fries

I've been seeing a lot of posts about baked zucchini fries over the summer and they looked so good that I had to try them.  Most of the recipes call for an egg wash or butter to drench the zucchini fries before putting on a coat of bread crumbs.  I decided to use EVOO instead of the egg or butter wash to make the dish a little healthier.  I'm sure the ones I made weren't as crispy but they were still delicious and flavorful!

Baked Arancini with Leftover Risotto

Let me just say: I LOVE LEFTOVERS!! Usually I'm very happy just heating up whatever leftovers we have in the fridge.  However, we made a big batch of risotto for our Mushroom Risotto with Poached Egg and I didn't want to just eat reheated risotto again so I found another option.  I figured the Italians had come up with something to do with their leftover risotto and they have.  In Italy leftover risotto is mixed with egg and flour, rolled in bread crumbs, and deep fried.  I'm not a fan of frying things so I found a healthier option: baking. All the recipes I found called for frying so I just heated the oven, put them in and kept an eye on them until they were done.
