Baked Zucchini Fries

I've been seeing a lot of posts about baked zucchini fries over the summer and they looked so good that I had to try them.  Most of the recipes call for an egg wash or butter to drench the zucchini fries before putting on a coat of bread crumbs.  I decided to use EVOO instead of the egg or butter wash to make the dish a little healthier.  I'm sure the ones I made weren't as crispy but they were still delicious and flavorful!




Baked Zucchini Fries                                            Servings: 2 to 3
2 medium zucchini                                                   Time: 20 minutes
1/2 cup Italian or Panko bread crumbs
1/3 cup EVOO
Salt and pepper to taste

 Preheat the oven to 425 degrees.  Wash and cut the zucchinis into 4 inch long strips about 1/4 of an inch thick.  You can leave the seeds in or take them out depending on your preference.  Put the zucchini strips on a baking sheet.  Drizzle the EVOO over them and toss.
 Sprinkle the bread crumbs over the top and toss again to coat.  Salt and pepper to taste.  Bake the zucchini fries for 15 minutes.  They will be golden brown when done.  They can be served alone as an appetizer or as a side dish for a summer meal! Enjoy!!
