Pumpkin Sage Soup

Steve and I both love peppers! We usually buy at least three of them ever week at the grocery store. We always get red, yellow, or orange ones because neither of us like green pepper. They just aren't sweet enough!!

Cabbage Carrot Coleslaw

Cabbage Carrot Coleslaw, Cabbage Carrot Coleslaw, Cabbage Carrot Coleslaw! There I wrote it three times fast, but now the trick is to say it three times fast. Anyway...this is a great dish for summer picnics or barbecues! The fresh veggies are bright and crisp. The dressing is the right addition of sour and flavor.

Sauteed Zucchini

Do you ever have those days where you have no idea what to eat for lunch? Whenever I have those moments I usually have sauteed zucchini. I LOVE zucchini! It's such a versatile vegetable--I've used it in desserts such as zucchini bread, and main dishes. This is definitely the simplest way I cook zucchini, but it's always good!

Tomato Basil Salad

I'm a big fan of tomatoes but my tummy isn't that happy when I eat them. I recently learned that putting lime juice on tomatoes make them easier to digest. And it really works!!!! The lime juice adds a really nice pop to this simple salad.

Creamy Mashed Sweet Potato (Vegan)

Sweet potatoes are great nutriente filled good. They have a great sweet flavor which will curb sweet craving. One cup of sweet potato contains 65% of the daily required amount of Vitamin C! It has a low glycemic index which means that it won't make your blood sugars increase! They are high in potassium which helps with muscle cramps and stress. The most nutritious part of the sweet potato is the sink so don't throw it away!!! (Source)

Quinoa-Stuffed Peppers

In this day of texting, email, and facebook I still get excited when I get real mail in our mailbox. Last week one of my grandmothers sent me an article about Austin and a recipe for Quinoa Stuffed Peppers. Her note said "I know you really like quinoa and red peppers are so good for you--so full of Vitamin C--I thought it was a good combination." Grandma, thanks for the recipe!

Braised Radishes

When I was in 8th grade we had a science fair. The project I created was "Does the pH of water effect how plants will grow?" I grew radish plants and watered some with a mixture of water and vinegar and others with a mixture of water and baking soda. My results showed that the plants with a neutral pH grew the best.

Planting My Garden

Happy Spring! On Monday it was 85 and sunny but yesterday and today it was in the high 40s and rainy. One thing I've learned to love about Texas is that the growing season is VERY long. I planted a few plants in early March and they are still doing great. They are in pots and I only had to bring them in to the house twice to keep them away from the cold.

Cauliflower Steaks

Cauliflower steaks? Yes, you are reading correctly. These are another vegetable turned into "meat" dish. I know cauliflower shouldn't be called a steak but it really does leave you with the same feeling of fullness. Although I'm not a vegetarian I do cook a lot of vegetarian dishes and eat vegetable based dishes when I go out to eat. Sometimes the vegetarian options are just a bunch of vegetable side dishes put together to make a meal, which is great if that is what you want. But there are other times when I want a substantial meal where the main dish feels like a coherent thought. This is one of those dishes.

Roasted Tomato Soup

Last week my parents and brother came to visit. It was so nice to see them and show them around Texas. We spent a day in Austin walking around SoCo, having lunch from a bunch of food trucks, going to the capital, visiting Whole Foods, and eating at Barley Swine. We went for a few hikes at parks in the area and they came to some of my yoga classes. I loved having them in my yoga classes and it was nice to show them some stretching/yoga they can do at home. My dad and I are trying to figure out a way for me to teach him yoga using Skype!!

Easiest Way to Cook a Spaghetti Squash

Squash is a very popular winter dish in our house. A few years ago I discovered spaghetti squash! It is a great substitute for wheat pasta in any dish. We've made cheese sauces and tomato sauces to go with our spaghetti squash. I only recently found the best way to cook spaghetti squash!

All About Avocados

I love avocados!!! Until recently I didn't realize they were a fruit! In my mind avocados are in their own food group because it's hard for me to think of them as a fruit but I also know they aren't a vegetable. Whatever they are classified as I still love them unconditionally.
One of the main things I love so much about avocados is that they can be both savory and sweet. The creaminess makes it a great alternative to dairy products. But the creaminess isn't for everyone; two of the most important men in my life don't like avocados because of the texture.

In college my friends would order pizza from Dominos. To save money and my health I usually didn't join them. But the breadsticks always looked SO yummy. This is the heathy version!! I doubt Dominos will start making them but I hope you try them next time you are craving something warm and cheesy.

Cauliflower Wings

We've started cooking Superbowl food a little early in our house. Growing up the only football game my family would watch was the Superbowl but since meeting Steve I've watched many more since he's a big Steelers fan. 

Steve wanted to make chicken wings last Sunday night and suggested I make Cauliflower Wings which he had seen a few places online.  We decided to start making our Superbowl food early since there is only so much food you can eat in one night.
