A few weeks ago I posted about avocados so you won't be at all surprised that by this open-faced avocado sandwich or avocado toast recipe. It's so easy to make and is a great filling savory breakfast or lunch. I love the combination of the crunchy toast with the smoothness of the avocado.
2 pieces of bread (I use sprouted grain bread)
Lemon or lime juice
Toast the bread. Mash the avocado with a fork and mix in salt, pepper, and the lemon or lime juice. I'm not sure of the exact measurements because I put a little in, taste, and add more if needed. The amounts will also depend on how ripe the avocados are. Spread the avocado mixture on each slice of toast. Enjoy!
