Raise your hand if you like fall! Ollie and I have all our arms and legs raised!! We are loving the cooler weather. It means long walks when the sun is up, running around in the back yard and keeping the back door open during the day to let the fresh air in.
Steve and I both love peppers! We usually buy at least three of them ever week at the grocery store. We always get red, yellow, or orange ones because neither of us like green pepper. They just aren't sweet enough!!
Life just keeps moving faster and faster! I'm leaving on Saturday for a few weeks in Becket and am very excited to do a week of yoga with Shiva Rea!! I will also get to see lots of friends and family, do some wedding planning, and go to our close friends wedding!!!
It's be a long time since I shared a recipe! This is simple but delicious. The one downside to this recipe is that you have to plan ahead so you have time to soak the beans. Ideally they will soak for 12+ hours but I've made it work with only 6 hours of soaking.

Do you ever have those days where you have no idea what to eat for lunch? Whenever I have those moments I usually have sauteed zucchini. I LOVE zucchini! It's such a versatile vegetable--I've used it in desserts such as zucchini bread, and main dishes. This is definitely the simplest way I cook zucchini, but it's always good!
When I was growing up, we were having a party with a bunch of my brother's friends over for dinner around the bonfire. One of the girls came up to my mom and said "I love the green pasta." She said it is all seriousness and my mom had to try very hard not to laugh at such a cute thing. The green pasta the girl was referring to was Pesto Pasta. And I agree the green pasta is amazing!!!
I'm a big fan of tomatoes but my tummy isn't that happy when I eat them. I recently learned that putting lime juice on tomatoes make them easier to digest. And it really works!!!! The lime juice adds a really nice pop to this simple salad.
For Memorial Day weekend I drove to Tulsa, Oklahoma for a friends wedding. It's a 6.5 hour drive from here so I knew I needed to bring some food if I didn't want to eat roadside food. This is one of the things I made for the trip! I wanted something simple, health, and didn't need to be refrigerated.
Growing up I didn't like potato salad at all, but now I do. I learned that I didn't like it because I'm not a big fan or mayonnaise and most potato salads have a ton of it. My mom make a scrumptious French potato salad which uses vinegar for moisture instead of mayo.
Sweet potatoes are great nutriente filled good. They have a great sweet flavor which will curb sweet craving. One cup of sweet potato contains 65% of the daily required amount of Vitamin C! It has a low glycemic index which means that it won't make your blood sugars increase! They are high in potassium which helps with muscle cramps and stress. In this day of texting, email, and facebook I still get excited when I get real mail in our mailbox. Last week one of my grandmothers sent me an article about Austin and a recipe for Quinoa Stuffed Peppers. Her note said "I know you really like quinoa and red peppers are so good for you--so full of Vitamin C--I thought it was a good combination." Grandma, thanks for the recipe!

When my family was visiting a few weeks ago we visited Whole Foods main store in Austin. It's huge and is a special treat for me! I know cauliflower shouldn't be called a steak but it really does leave you with the same feeling of fullness. Although I'm not a vegetarian I do cook a lot of vegetarian dishes and eat vegetable based dishes when I go out to eat. Sometimes the vegetarian options are just a bunch of vegetable side dishes put together to make a meal, which is great if that is what you want. Last week my parents and brother came to visit. It was so nice to see them and show them around Texas. We spent a day in Austin walking around SoCo, having lunch from a bunch of food trucks, going to the capital, visiting Whole Foods, and eating at Barley Swine. We went for a few hikes at parks in the area and they came to some of my yoga classes. I loved having them in my yoga classes and it was nice to show them some stretching/yoga they can do at home. My dad and I are trying to figure out a way for me to teach him yoga using Skype!!
Squash is a very popular winter dish in our house. A few years ago I discovered spaghetti squash! It is a great substitute for wheat pasta in any dish. We've made cheese sauces and tomato sauces to go with our spaghetti squash. I only recently found the best way to cook spaghetti squash!
