Mung Bean Pancakes

Life just keeps moving faster and faster! I'm leaving on Saturday for a few weeks in Becket and am very excited to do a week of yoga with Shiva Rea!! I will also get to see lots of friends and family, do some wedding planning, and go to our close friends wedding!!! 

It's be a long time since I shared a recipe! This is simple but delicious. The one downside to this recipe is that you have to plan ahead so you have time to soak the beans. Ideally they will soak for 12+ hours but I've made it work with only 6 hours of soaking.

Homemade Hummus

Summer time reminds me of hummus. It is a food that can be made at any time during the year but for some reason I start to crave the creamy, fresh flavor of hummus when it starts to get warm. I don't buy hummus at the grocery store because I'm not a fan of the flavor of most grocery store hummus. By making it at home I can add any types of spices that I want!

Red Lentil Dhal

For Christmas my grandmother got me the cookbook Eat Taste Heal. I've made a number of recipes from it and now I'm going to share one with you. This is a great dish to make in the spring when you are feeling slow, heavy, and stagnant. It is a perfect kapha balancing dish!

Stuffed Sweet Potatoes

I love sweet potatoes but sometimes if I have them too much I get sweetness overload.  If I'm in the mood for something simple and easy I will just have a plain baked potato with butter or ghee and salt.  Sometimes I also dress them up a bit to turn them into a main dish if I'm not just feeding myself.

This recipe is very easy to do and is very impressive when you serve it to guests.  You can bake the sweet potatoes in the oven at 400 degrees for about 45 minutes. Or you can bake them in the crock pot. Just wrap them in foil (making sure to have any creases facing up so the juice doesn't spill) and place them in the crock pot on low for 6 to 8 hours! I got so happy with I figured out I could make the sweet potatoes in the crock pot because it turned them into a perfect week night meal.

Black Bean Sliders

Steve had a craving for sliders which sounded yummy to me but I needed a break from meat so I'm made Black Bean Sliders to go along side the beef sliders.  I've never made my own black bean burgers but I've have had both good and bad store bought ones. These are SO yummy! I had to stop myself from eating too much. You can easily make these into regular burger size by just making the patties bigger.

Sweet Potato, Quinoa, Garbanzo Bean Chili

I made chili last week!! I didn't want to do a traditional meat and bean one so I mixed together some sweet potatoes, quinoa, garbanzo beans and a few extra ingredients.  It's a delicious meal to come home to at the end of they day.  You can prepare it on the stove and finish it there, or you can throw it in the crock pot and let it cook for the day while you are at work.

Quinoa, Black Beans, and Cilantro Salad

Even though it's starting to feel like fall in the rest of the country we still have 90 degree weather here in Texas.  Trust me, it's a nice change from the 100 degree weather we had for the past few weeks.  Even though it's still summer weather I've been getting excited to make fall dishes like pumpkin bread, sweet potatoes, butternut squash and many other things.  But I've decided to wait and do a few more summer dishes that I won't want to do in a few months.  One of them is quinoa, black beans and cilantro.  I'm sure it could be a dish for another season but cilantro always makes me think of summer and it doesn't seem right to have it at another time of year.

Moroccan Lentils

Over the past year I have learned that I love lentils! Before I made this realization I had really only had lentils that my host mother is Chile had cooked with a tomato sauce and sausages.  I've tried to replicate her recipe but the tomato sauce we have in the US just isn't the same as in Latin America. So I'm just going to leave the dish has a happy memory.
