Soaked Peeled Almonds

WOW!!! It's been a great but exhausting few weeks. Steve had 10 days off from work so we drove for two days to Pittsburgh and then were in Becket for another few days before driving back to Texas. It was such a great vacation and was so nice to see our friends and family! 

In honor of road trips I'm going to share one of my favorite snacks today; soaked and peeled almonds! As you probably know by know nuts are a good snack option because they are filled with oil, protein, calcium, and magnesium. I never ate a lot of nuts until I learned about soaking. Soaking nuts makes them one hundred times better!!

Homemade Hummus

Summer time reminds me of hummus. It is a food that can be made at any time during the year but for some reason I start to crave the creamy, fresh flavor of hummus when it starts to get warm. I don't buy hummus at the grocery store because I'm not a fan of the flavor of most grocery store hummus. By making it at home I can add any types of spices that I want!

Crispy Kale Chips


This is one of my all time favorite veggie dishes to eat and it's really easy.  During my Yoga Teacher Training one of my friends said she had made a batch of kale chips for her kids and they devoured the whole head of kale.  The way she described it sounded delicious and I knew I had to try it.  I hope you enjoy them as much as I do. I will usually make it as a side dish for lunch or dinner, but I've also sat down and eaten a whole head of kale chips by myself for lunch.
