When my family was visiting a few weeks ago we visited Whole Foods main store in Austin. It's huge and is a special treat for me! I was able to find a number of things I haven't been able to find where we live. All around the store there are racks with recipe ideas and this recipe was adapted from one of those sheets. My mom and I made it for dinner while they were here and it was a big hit.
Quinoa with Mushrooms and Vegetables
1 cups dry quinoa
2 cups fresh shitake mushrooms, chopped
2 peppers, chopped
1 onion, chopped
2 cloves garlic, minced
2 tablespoons sesame oil
3 teaspoons liquid aminos
2 teaspoons rice vinegar
In a large skillet heat the sesame oil and saute the onions, mushrooms, and peppers until caramelized. Add the garlic. Add the liquid aminos and rice vinegar. Add 2 cups of water to deglaze the pan. Increase heat and cook until the pan is almost dry. Remove the mixture and set aside.
Rinse out the pan and add 1 cup of quinoa and 4 cups of water. Bring to a boil, cover, and reduce to a simmer. Cook until done, about 15 minutes. When the quinoa is done stir in the vegetables and serve! Enjoy!!
