I've made cauliflower pizza before and now I'm making spinach pizza. When I first saw this recipe online I knew I had to try it but I also wasn't sure it would work. But it does!!
The spinach has a lot of moisture in it so you want to make sure to remove some of it before mixing it with the egg, mozzarella, salt, and pepper. I used a strainer with a spoon to squeeze out some moisture but you can also use a kitchen towel but watch out for green!
Spinach Pizza
Adapted from Jo and Sue
2 cups fresh spinach
1 egg
1 cup + topping, grated mozzarella
Salt
Pepper
Pizza Sauce
Mozzarella cheese
Pizza toppings of choice
Preheat the oven to 425 degrees. In a blender or food processor blend the spinach until it is the consistency of baby food. Put the spinach in a strainer and remove the excess moisture by pushing a spoon on to it. Put back in the food processor and add 1 cup of mozzarella, egg, salt, and pepper and mix until just combined. Line a baking sheet with parchment paper and spread out the spinach mixture. Bake for 15 minutes. Put on sauce, cheese, and toppings. Broil for a few minutes until the cheese is melted. Serve and enjoy!!!

This looks delish! I tried the califlower pizza crust before, it was good...even if I did add way too much garlic. I can't wait to try this spinach pizza.
