Cabbage Carrot Coleslaw

Cabbage Carrot Coleslaw, Cabbage Carrot Coleslaw, Cabbage Carrot Coleslaw! There I wrote it three times fast, but now the trick is to say it three times fast. Anyway...this is a great dish for summer picnics or barbecues! The fresh veggies are bright and crisp. The dressing is the right addition of sour and flavor.

Cabbage Carrot Coleslaw
Serves 6 to 8 as a side dish, 4 as a main dish

1 head of cabbage
6 to 10 carrots, peeled
EVOO
Apple Cider Vinegar
Salt
Pepper
Herbs

Chop and cash the cabbage. Shred the carrots in a food processor with the grater circle. Mix together the cabbage and carrots in a large bowl. In a small bowl mix together equal parts EVOO and apple cider vinegar, along with salt, pepper, and herbs. Drizzle the dressing over the coleslaw and mix everything together. Serve immediately or let it sit for a few hours. Enjoy!!
