Creamy Mashed Sweet Potato (Vegan)

Sweet potatoes are great nutriente filled good. They have a great sweet flavor which will curb sweet craving. One cup of sweet potato contains 65% of the daily required amount of Vitamin C! It has a low glycemic index which means that it won't make your blood sugars increase! They are high in potassium which helps with muscle cramps and stress. The most nutritious part of the sweet potato is the sink so don't throw it away!!! (Source)
Usually having one sweet potato as a meal doesn't quite fill me up as much as I want it to but adding the avocado adds some healthy fat and is quite satisfying. Until now I've usually added butter or ghee to make the potato creamy but the avocado works just as well. 

Creamy Mashed Sweet Potato
Serves 1
1 sweet potato
1/2 avocado

Preheat the over to 400 degres. Wash the sweet potato and poke holes in the skin with a fork. Place in the oven and bake for 45 to 55 minutes until potato is soft. When the potato is done scrape out the inside and place in a bowl. Cut the skin into small pieces. Cut the avocado in half and scoop into the bowl. With a fork mash together the sweet potato and avocado. Add salt and pepper to taste. Enjoy!!!!
