Quinoa, quinoa, quinoa!!! Did you know 2013 has been called The International Year of Quinoa?!? I didn't until someone sent me this article a few weeks ago.
So I'm sharing another quinoa dish! I hope you like it as much as I did. I've been having a lot of fun search for new ways to cook with quinoa. If you google quinoa recipes so many options come up but sorting through to find the best ideas takes a little time. I kept running across quinoa patties, sometimes called quinoa burgers, so I knew I had to give them a try.
These are so versatile that you can easily make the smaller and serve them as appetizers, add a dipping sauce to go along with them, make them into sliders with buns, or make into regular burger size!
Quinoa and Sun-dried Tomato Patties
Adapted from The Iron You
2 cups cooked quinoa
2 eggs
small handful parsley, chopped
1/3 cup sun-dried tomatoes, chopped
1/4 cup bread crumbs
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Salt
Pepper
EVOO
Mix everything together in a bowl. Make sure it is combined well. Let it sit for about 5 or 10 minutes, giving the bread crumbs time to absorb the moisture. Heat EVOO in a skillet. Shape the quinoa mixture into your preferred size for patties. Place in the skillet and cook for about 7 minutes, or until golden brown. Turn over and cook on the other side, until finished. Repeat until all patties are cooked. Enjoy!!!
These look great! I have been making something similar with kalamata olives, a little onion, a little parm, and panko. I will have to try these...maybe with some basil....
