We made appetizers for dinner and my contribution was Cucumber Rollups. I made hummus and spread it on thinly slices cucumbers before rolling them up. It was such an easy appetizer and very healthy.
1 large cucumber
Homemade Hummus or store bought
Prepare the hummus. Slice the cucumbers with a madoline. If you don't have one you can try cutting them with a knife, just make sure they are very thin. Lay out the cucumbers so there are two on top of each other. Pat the cucumbers dry with a paper towel. Spread about 1 tablespoon of hummus starting at one end to the other. Try staying away from the edge so the extra doesn't ooze out. Leave about one inch at the top without hummus. Starting at the bottom roll up the cucumber all the way to the top. Sprinkle with a little salt. Serve and enjoy!!!
