These "pizzas" were just as good as the original and really yummy. I was inspired by a memory I have from my childhood when I made made a meal with polenta and tomato sauce that I loved. I'm not sure what he did to make it but it was so good that I still remember it.
These can also be served as an appetizer at a party! We made ours with just cheese but you can easily add on any toppings that you would normally put on pizza!
Mini Polenta Pizzas
Serves 2
1 roll precooked polenta
Homemade Pasta Sauce
Mozzarella cheese, grated
EVOO
Pizza toppings of choice
Preheat the oven to 400 degrees. Slice the polenta into 1/4 inch disks. Heat a drizzle of EVOO in a saute pan over medium. Place the polenta in the pan and cook on each side until golden and crispy, about 5 minutes per side. When all the polenta is cooked place on a baking sheet. Top with a spoonful of tomato sauce, grated cheese, and any other toppings. Bake for about 5 to 10 minutes until the cheese is melted. The amount of time will depend on your toppings. Enjoy!!

These look really good! Thanks for sharing at A Humble Bumble :)
ReplyDeleteYum! This would probably get my kids to eat polenta. I have made it a few times but everyone turns their noses up. Put yummy toppings on and I think I could probably get them to at least try it-- if not like it!
