Homemade Pasta Sauce

This is a perfect dish to make at home on a rainy weekend! You can have spaghetti and meatballs for dinner and then freeze the rest of the sauce to use instead of buying jars of sauce. It's delicious and really easy.

If you don't like your sauce as chunky you can substitute a can of tomato puree or an additional can of crushed tomatoes in place of the whole tomatoes.  All the fresh herbs can be replaced with dried herbs if they aren't in season or you don't have access to them.



Homemade Pasta Sauce
1 sweet onion, chopped
3 large cloves of garlic, minced
2 tablespoons EVOO
2 cans (28 oz each) crushed tomatoes
1 can (28 oz) whole tomatoes
2 cans (4 oz each) tomato paste
3 tablespoons balsamic vinegar
3 to 4 sprigs of fresh basil, chopped
5 to 6 sprigs fresh oregano
Salt and Pepper

Saute the onion in the EVOO over medium low heat until translucent.  Add the garlic and cook for another 1 minute. Add the tomatoes and tomato paste. After it cooks for another hour add the balsamic vinegar and fresh herbs. Turn the heat to low and simmer for 4 to 5 hours. Add salt and pepper to taste.

We don't use all the sauce at once so we freeze most of it. You can either freeze it in ziplock bags or jars. If you use jars make sure not to fill above the freeze line. So nice to pull it out during a busy week when you don't know what to make for dinner!
