Mini Polenta Pizzas

Steve and I love to cook but there are still some nights were we are worn out from work or life and don't have energy to put together an elaborate meal. One night like this I threw together these Mini Polenta Pizzas and they were a big hit. Both of us like pizza, but since we make our own dough it takes some planning ahead of time. 


These "pizzas" were just as good as the original and really yummy. I was inspired by a memory I have from my childhood when I made made a meal with polenta and tomato sauce that I loved. I'm not sure what he did to make it but it was so good that I still remember it. 

These can also be served as an appetizer at a party! We made ours with just cheese but you can easily add on any toppings that you would normally put on pizza!

Mini Polenta Pizzas
Serves 2

1 roll precooked polenta
Homemade Pasta Sauce
Mozzarella cheese, grated
EVOO
Pizza toppings of choice

Preheat the oven to 400 degrees. Slice the polenta into 1/4 inch disks. Heat a drizzle of EVOO in a saute pan over medium. Place the polenta in the pan and cook on each side until golden and crispy, about 5 minutes per side. When all the polenta is cooked place on a baking sheet. Top with a spoonful of tomato sauce, grated cheese, and any other toppings. Bake for about 5 to 10 minutes until the cheese is melted. The amount of time will depend on your toppings. Enjoy!!

  2. Yum! This would probably get my kids to eat polenta. I have made it a few times but everyone turns their noses up. Put yummy toppings on and I think I could probably get them to at least try it-- if not like it!
