Red Pepper Quinoa Pizza Bites

A few weeks ago I posted a quinoa pattie recipe that I loved a lot! And it inspired me to play around a little more with other quinoa recipes. I saw a recipe for Quinoa Pizza Bites on Pinterest and knew I had to give them my own spin.


I love eating with my fingers. It makes me feel closer to my food and who doesn't like getting a little messy. One of my favorite pizza topping are red peppers so I made red pepper quinoa pizza bites. Some of mine were falling apart so it was easier to put a dollop of sauce on top instead of dipping. 

Red Pepper Quinoa Pizza Bites
Adapted from Fit for Success

1 cup quinoa, dry
2 eggs
1 cup mozzarella, grated
1/2 teaspoon onion powder
1 teaspoon dried basil
2 red pepper, diced
Salt
Pepper
Tomato Sauce for dipping

Preheat the oven to 350 degrees. Prepare the quinoa according to the directions on the package. In a large bowl combine the cooked quinoa, eggs, mozzarella, onion powder, basil, red pepper, salt, and pepper. Spray a baking sheet lightly with oil. Take a cookie size piece of the mixture and roll it into a ball. Place on the baking sheet and repeat with all the quinoa. Bake for 15 to 20 minutes. Let cool for a few minutes. Enjoy with some tomato sauce for dipping!!
