Cauliflower Bread Sticks

In college my friends would order pizza from Dominos. To save money and my health I usually didn't join them. But the breadsticks always looked SO yummy. This is the heathy version!! I doubt Dominos will start making them but I hope you try them next time you are craving something warm and cheesy.


These are so easy to make! And they are so yummy that I ate an entire head of cauliflower (Steve was at work that night so I didn't have anyone to share it with.) 

Originally I was going to make pizza but that seemed like a lot of work to me at the time.  So I just had the marinara sauce on the side to dip my cauliflower sticks in.

Cauliflower Bread Sticks

1 head of cauliflower "rice"
1  egg
1/3 cup soft goat cheese
1 teaspoon roasted garlic
Fresh mozzarella
Salt
Pepper


Preheat the oven to 400 degrees.  Chop the cauliflower and pulse it in the food processor until it is in small pieces. Place 1 inch of water into a pot and bring to a boil.  Add in the riced cauliflower and cook for 4 to 5 minutes.  


Drain in a fine mesh strainer and transfer the cauliflower to a clean dry kitchen towel.  Pull the sides up to create a ball and wring out as much water as you can from the cooked cauliflower.  (You might want to let it cool before you do this step. My hands are sensitive to heat.) 


Place the cauliflower, egg, goat cheese, garlic, salt and pepper into a mixing bowl. Line a baking sheet with parchment paper and press the cauliflower mixture onto it. Make the dough about 1/3 inch thick.  Bake for 35-40 minutes. Take out of the oven and place slices of mozzarella on top. Bake for another 8 to 10 minutes until the cheese is melted. Cut into bread stick size strips and serve with marinara sauce on the side. Enjoy!

**Another option is to make pizza with this crust.
