I love eating warm, delicious soup when the days start to get colder with fall. Even thought it's not cold here yet I made soup last night. It was so easy and yummy. I was a little nervous about how long to cook the tortellini but it ended up being just the right amount of time.
Tortellini Soup
Time: 50 minutes to 1 hour
Servings: 4
1 package (8 oz) Three Cheese Tortellini (We used Barilla)
1 can diced tomatoes
8 cups water
3 vegetable bullion cubes (you can also use chicken bullion)
3 cups fresh spinach
Salt and pepper
Bring the water to a boil and add the vegetable bullion cubes. Stir so the cubes dissolve. Add the tomatoes and fresh spinach. Simmer for 30 minutes. Add the tortellini and increase the heat to medium -high for 20 minutes. Add salt and pepper to taste.
To make this a meat dish you can easily add sausage! Enjoy whichever way you decide to make it!
