Cheesy Cheesy Mac 'n Cheese

WARNING: This is not a healthy dish.  I've been eating healthy since I got to Texas with a few meals not being so healthy and this is one of them.  But at least we are making this at home so we know exactly what is going into it and that it's real cheese and all good quality ingredients.



Cheesy, Cheesy Mac 'n Cheese          
1/3 cup butter                                
1/3 cup flour
2 1/2 cups milk                                                                        Servings: 4 to 6
2 3/4 cups grated cheese, preferably                           Time: 30 to 45 minutes
cheddar, gruyere, edam, or fontina
1 pound pasta of your choice

Cook the pasta according to the instructions on the package. Drain and set the pasta aside. Melt the butter in a medium sized pot.  When the butter melts add in the flour and stir together for about 10 minutes or until the mixture turns a light brown color.  Continue stirring the entire time so the butter and flour don't burn. When you've finished roux add the milk gradually with a few pours at a time.  Bring the mixture to a boil, add salt and pepper to taste and let it simmer for about 6 to 10 minutes.

Next stir in the cheese one hand full at a time until it's all mixed in and melted.  Make sure to taste the sauce to make sure it meets your standards for cheesiness and creaminess.

 The sauce is done now and you can pour it over the pasta.  Serve with fresh ground pepper on top!
