Quinoa Pilaf with Brussels Sprouts and Pistachios

Talk about yummy and healthy! This is the dish for you if you are looking for that combination. 


Prepare the quinoa according to the directions on the package. Make sure to rinse it off before cooking it! Roast the brussels sprouts using this recipe

Then mix together the brussels sprouts, quinoa, and pistachios. Add a little salt and pepper if it needs more flavor. Add a drizzle of EVOO if it need a little more moisture.

My pistachios were very salty so I didn't need to add extra salt but I did add some EVOO.

Quinoa Pilaf with Brussels Sprouts

1 pound brussels sprouts
1 cup quinoa, dry
2 cups water to cook the quinoa
1 cup pistachios, shelled
Salt and Pepper
EVOO

Prepare the brussels sprouts according to my Roasted Brussels Sprouts recipe.  Prepare the quinoa according to the directions on the package.  Once both are cooked mix together the brussels sprouts, quinoa, and pistachios. Add a little extra salt and/or pepper after you taste it. Add EVOO if it needs more moisture. Serve and enjoy!!
