Refreshing Potato Salad

Growing up I didn't like potato salad at all, but now I do. I learned that I didn't like it because I'm not a big fan or mayonnaise and most potato salads have a ton of it. My mom make a scrumptious  French potato salad which uses vinegar for moisture instead of mayo. 


This potato salad is a variation on traditional French potato salad but much simpler than other recipes I've made. The dressing really makes this dish perfect. It was best the day I made it but still a great option for lunch the next day.

Refreshing Potato Salad
Serves 3-4
Dressing:
1 teaspoon dried tarragon
1/4 cup lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/8 teaspoon dry mustard
2 tablespoons raw honey
1/2 cup EVOO

Salad:
6 medium red potatoes
1 cup peas, frozen or fresh
2-3 stalks celery, chopped
1/4 cup parsley, chopped

Clean and pare the eyes from the potatoes and place in a saucepan. Cover with water and bring to a boil, reduce to medium heat and cook for about 30 minutes until soft. While the potatoes are cooking mix together all of the ingredients for the dress in a blender or food processor. When the potatoes are done drain the water and let them cool enough to handle. Cut the potatoes into 1 inch size chunks. In a large mixing bowl mix together the potatoes, celery, parsley, peas, and dressing. Serve and enjoy!!

  1. I have been wanting to try a potato salad without mayo for awhile now...yours sounds very good. My oldest dislikes mayo so this would be perfect for him!
