Latkes with Poached Eggs

We aren't Jewish but if there is a holiday that is connected with yummy food we are ready to cook.  We made latkes with a poached eggs. Originally I was thinking of making breakfast for dinner with a potato and carrot hash and a poached egg. Since it was Hanukkah we decided to try latkes with the poached egg. It was delicious!!



The shredded potatoes, onions, eggs, flour, salt, and pepper are mixed together.  They are browned on each side in a pan with oil before they are baked for 10 minutes.  These are so yummy! I hope you enjoy them as much as we did!

Latkes with Poached Eggs
3 medium potatoes
1 onion
2 eggs
1/3 cup flour
1 tablespoon salt
1 teaspoon pepper
EVOO or vegetable oil
Eggs for poaching

Preheat the oven to 425. Put the potatoes into a paper towel and squeeze out as much of the moisture as you can.  Mix together the potatoes, onion, eggs, flour, salt, and pepper. Form into patties that are 1/4 to 1/2 inch thick.  Heat the oil over medium heat.  Place the latkes in the oil and cook for 4 minutes and then flip to the other side. When the latkes are all crispy place them on a baking sheet and bake for 10 minutes. While the latkes are baking poach your eggs and serve!! Enjoy!!
