Baked Apple Chips

Yesterday we passed 3000 visits to our blog! Thanks so much for everyone to their support for the past three months. I'm having a blast writing and sharing all of our recipes and what is going on in our life. I hope you continue to visit us here. We really appreciate all the support.

I had a big bag of apples that I wanted to use up before I left for my trip home. The only fruit Steve eats are clementines so any other fruit I leave at home will just go bad.  I usually like to juice my apples but I have too many to keep having juice for the next few days.

Also apple chips seem like the perfect snack to bring with me. I usually just bring raw fruit but these will be an extra special treat! Steve even tried these and asked if he could take some as a snack for lunch!

You can use any number of apples but I wrote this recipe for the 8 that I had.  You can easily cut down the spices to match the apples you have in your fridge.

Baked Apple Chips
8 apples
2 tablespoons cinnamon
1 teaspoon nutmeg
1 teaspoon all spice
1 teaspoon cardamon

Preheat the oven to the lowest heat.  Mine goes to 150 degrees but if your's is higher or lower just make sure to adjust the baking time.

Wash the apple and cut off the top and bottom.  Using a mandolin or a sharp knife to slice the apples to about 1/16 of an inch.  There is no need to core them because the seeds will fall out when you cut them and if they don't just pick them out. If you have a corer feel free to use it. I don't have one and didn't feel like wrestling the apples with a knife. Lay the apples out on a parchment covered baking sheet.

Mix together the spices and sprinkle it on top of the apples. Bake for about 20 minutes and then flip the apples over and bake for another 20 minutes.  The apples might not be completely dried when you take them out of the oven but they will crisp up as they sit.  And you can always place them back in the oven if they need more time. Repeat in batched until all your apples are done.
