Nothing reminds us of home more than chocolate chip cookies. Of course everyone has a different recipe they use so we are using one from Cooks Illustrated because we have never gone wrong cooking anything from their wide variety of recipes.
Brown Butter Chocolate Chip Cookies
1 3/4 cups white flour
1/2 teaspoon baking soda
14 tablespoons unsalted butter
1/2 cup granulated sugar
3/4 cups packed brown sugar
1 teaspoon salt
2 teaspoons vanilla extract
1 egg
1 egg yolk
1 1/4 cups semisweet chocolate chips
Move the oven rack to the middle position and preheat to 375. Line 2 baking sheets with parchment paper. Whisk together the flour and baking soda in a medium bowl and set aside.
Heat 10 tablespoons butter in a skillet over medium-high heat until melted, about 2 minutes. Continue cooking and stirring until the butter is dark golden brown and has a nutty aroma, about 1 to 3 minutes. Remove from the heat and transfer the butter into a large heatproof bowl. Stir in the remaining 4 tablespoons butter until all of it is melted.
Add the sugars, salt and vanilla to the bowl with the butter and whisk until it is all mixed. Add the egg and yolk and whisk until there are no sugar lumps, about 30 seconds. Let the mixture stand for 3 minutes and whisk for another 30 seconds. Repeat the process of resting and whisking 2 more times until the mixture is thick, smooth, and shiny. With a rubber spatula or wooden spoon, stir in the flour mixture until it's combined, about 1 minute. Stir in the chocolate chips.
