Almond Maple Cookies

I've been craving cookies for the past few weeks and these hit the spot! They are sweet, delicious, and healthy. What more could a girl with a sweet tooth ask for? These cookies are very delicate so make sure you handle them with care. 



This recipe was adapted from Ayurvedic Cooking for Westerners

Almond Maple Cookies
Makes about 20 to 25 cookies.
1 cup raw almonds
1/4 cup maple syrup
2 tablespoons water
1/4 teaspoon cardamom
1/4 teaspoon cinnamon

Preheat the oven to 300 degrees. Process the almonds finely. In a bowl mix together the almonds, maple syrup, water, cardamom, and cinnamon. On a well oiled baking sheet place teaspoon sized dollops of the batter. Press down the batter until flat. Bake for 15 to 20 minutes until golden brown. Enjoy!
